Zucchini and Swiss Chard Soup
A beautiful green soup...the essence of zucchini, swiss chard, and leeks...
Ingredients
- 4 tablespoons butter
- 2 cups leeks
- 5 cups chicken broth
- 2 lbs zucchini
- 3/4 lbs Swiss chard
- 1 cup whole fresh basil leaves
- Sea salt and fresh ground pepper to taste
Prep
- Wash and finely chop the leeks
- Coarsely chop the zucchini
- Cut the large stems off the Swiss chard
- Wash and dry the Swiss chard
- Stack the leaves and coarsely dice
- Wash and dry the basil leaves
Directions
In a large pot, melt the butter and sauté the leeks for about 10 minutes until soft. Add the broth and bring to a boil. Add the zucchini and, then, return to a boil. Lower the heat and simmer for about 20 minutes.
Remove from the heat. Add the Swiss chard and the basil. Cover the pot and let sit for 5 minutes.
In a food processor or blender, puree the soup in small batches. Put all of the soup back into the pot. Season with the sea salt and pepper. Gently heat through.
