Vegetable Soup with Turnips
The addition of turnips makes this vegetable soup special...
Ingredients
- 1/2 lb each turnips, carrots, potatoes, and onions
- 4 celery stalks
- 3 tablespoons butter
- 2 tablespoons olive oil
- 4 cups vegetable or chicken broth
- Fresh parsley to taste
- Sea salt and fresh ground pepper to taste
Prep
- Clean and dice the turnips, carrots, potatoes, and onions into 1/2 inch cubes
- Clean and thinly slice the celery
- Chop the parsley
Ingredients
In a large pot, melt the butter. Add the olive oil and heat gently. Add the vegetables and season generously with the sea salt and pepper. Cook for five minutes or so.
Add the broth and bring to a boil. Reduce the heat and simmer for 30 minutes or until the vegetables are tender.
Puree in small batches in a food processor or blender. Return to the pot and reheat gently. Garnish with the fresh parsley.
