Vegetable Basil Soup
Delicious and hearty, this soup is filled with crunchy vegetables and savory broth. Be generous with the fresh basil and serve with crusty bread, a big salad, and a little white wine...
Ingredients
- 4 tablespoons butter
- 1 medium onion
- 2 large stalk celery
- 2 large carrots
- 2 large potato
- 2 large tomatoes
- 6 cups vegetable stock
- 2 cups water
- 1/2 small cauliflower
- 2 small zucchini
- 1 small can peas
- Fresh basil to taste
- Sea salt and fresh ground pepper
- 1 cup Parmesan cheese
Prep
- Chop the onion and cauliflower
- Clean and slice the celery and carrots
- Peel the potato and cut into small cubes
- Chop the tomatoes
- Slice the zucchini
- Chop the fresh basil
- Drain the peas well
Directions
In a large pot, melt the butter over medium heat. Sauté the onions, celery, and carrots for about 10 minutes until the vegetables are just getting soft.
Add the basil, potatoes, tomatoes, chicken broth, and water to the pot. Bring to a boil, and, then, reduce the heat. Cover and simmer for about 20 minutes.
Add the cauliflower and zucchini. Simmer for another 10 minutes. Add the peas and heat through.
Season with the sea salt, pepper, and Parmesan cheese to taste.
- If you like, cook brown rice or ditalini according to the package directions and add to individual servings of soup
