Cape Cod Tomato Soup
A great favorite of our family and friends, nothing could be easier that this quick but tasty tomato soup...
Ingredients
- 6 large cloves garlic
- 1/4 cup extra-virgin olive oil
- 2 large Spanish onions
- 1 large can of plum tomatoes (28 oz)
- 2 cups chicken or vegetable broth
- 1 cup white wine
- Fresh oregano to taste
- Sea salt and fresh ground pepper to taste
- 1/2 cup ditalini
Prep
- Peel and mince the garlic
- Peel and finely chop the onions
- Break up the canned tomatoes (save the liquid)
- Chop the oregano
Directions
In a large pot, sauté the garlic and onions until the onions are soft. Add the canned tomatoes (including the liquid), the vegetable broth, oregano, sea salt and pepper. Bring to a boil.
Lower the heat and simmer for 15 minutes. Add the wine and the ditalini. Simmer for an additional 15 minutes or until pasta is cooked.
