Tomato Soup with Lentils
A combination of fresh tomatoes and tomato paste make this soup unusually savory, while the lentils give it a nice, nutitious boost...
Ingredients
- 3/4 cups dried lentils
- 4 cups water
- 1 medium onion
- 3 fresh tomatoes
- 4 carrots
- 3 celery stalks
- 3 large cloves garlic
- 1 cup tomato paste
- 1 cup white wine
- 3 scallions
- Sea salt and fresh ground pepper to taste
- Fresh parsley, thyme, dill, and tarragon to taste
Prep
- Rinse and drain the dried lentils
- Coarsely chop the onion
- Clean and thinly slice the carrots
- Clean and chop the celery and tomatoes
- Mince or press the garlic
- Chop the herbs
- Clean and slice the scallions
Directions
Put the lentils in a large pot with the water, onion, carrots, celery, garlic, and tomatoes. Bring to a boil.
Reduce the heat and simmer for about 3 hours partially covered.
Add the wine and season with the sea salt and pepper. Add small amounts of the herbs. Simmer for 15 minutes more.
Stir in the tomato paste and heat through. Garnish with the scallions.
