Summer Tomato Corn Chowder
One of the lightest of the corn chowders, this soup is full of fresh tomatos and basil...simple and delicious...
Ingredients
- 2 large cans of corn
- 3 tablespoons butter
- 1 medium onion
- 2 cloves garlic
- 2 celery stalks
- 1 large carrot
- 2 small potatoes
- 5 medium tomatoes
- 4 cups vegetable broth
- 1 cup half and half or light cream
- Fresh parsley
- Fresh basil
- Sea salt and fresh ground pepper to taste
Prep
- Drain the corn well
- Chop the onion
- Press or mince the garlic
- Thinly slice the celery and carrot
- Peel and dice the potatoes
- Coarsely chop the tomatoes
- Chop the basil
- Chop several sprigs of fresh parsley
Directions
In a large pot, melt the butter over medium heat. Add the onion, garlic, celery, and carrots. Sauté for about 10 minutes until soft.
Add the potatoes, tomatoes, vegetable broth, and the fresh basil. Season with the sea salt, and pepper. Partially cover and simmer over low heat for about 45 minutes.
Add the half and half or cream. Heat through until just before boiling. Garnish with the fresh parsley.
- If you can't get fresh basil, you can substitue 3/4 teaspoon dried basil
- In the summer months, when fresh corn is plentiful, you can make this soup with corn scraped right from the cob
