Creamy Shrimp Soup
This lovely soups owes its charm to the unusual combination of shrimp and Madeira...
Ingredients
- 2 tablespoons butter
- 1 1/2 lb fresh or frozen shrimp
- 6 large cloves garlic
- 1 cup Madeira (or white wine if you prefer)
- 3 1/2 cups chicken broth
- 2 cups cream
- 2 egg yolks
- Sea salt and fresh ground pepper to taste
- Fresh dill to taste
Prep
- Hard boil the eggs and remove the yolks
- Prepare the shrimp
- If fresh: shell and clean
- If frozen: defrost under cold running water and drain well
- Mince or press the garlic
- Chop the dill
Directions
In a large pan, melt the butter over medium heat. Sauté the garlic for a minute or two. Add the shrimp and sprinkle generously with sea salt. Brown the shrimp well on both sides. Set aside.
Put the chicken stock in a large pot . Add the Madeira or white wine--whichever you like. Add a little fresh dill. Simmer for 10 minutes.
Beat the cream with the egg yolks. Add to the soup along with the shrimp. Heat very gently for a few minutes to thicken. Do not boil.
Garnish with a bit of fresh dill.
