Mushrooms x 2 Soup
This pureed soup gets it's striking flavor from a combination of dried and fresh mushrooms...
Ingredients
- 1 cup water
- 4 cups vegetable stock
- 3 tablespoons butter
- 1 medium onion
- 3 cloves garlic
- 1 lb white button mushrooms
- 1/2 cup dried mushrooms
- 3 tablespoons flour
- Fresh thyme to taste
- Sea salt and fresh ground pepper
- 4 ounces sour cream
Prep

Soak the dried mushrooms in water for 30 minutes or so
- Drain and cut off the stems

Slice thinly and set aside
- Clean the fresh mushrooms, cut off the stems, and slice thinly
- Chop the onion and mince or press the garlic
- Finely chop the fresh thyme
Directions
In a large pot, melt the butter over medium heat. Add the onion, garlic, and fresh mushrooms. Season well with the sea salt and pepper. Turn up the heat and sauté until the liquid is reduced.
Lower the heat. Stir in the flour and thyme.
Add the chicken broth and the dried mushrooms. Bring to a boil. Reduce heat and partially cover. Simmer for about 45 minutes until the soup begins to thicken.
Puree in small batches in a food processor. Season with the sea salt and pepper. Garnish with a little bit of the sour cream.
- You can also garnish with a little yogurt if you like
