Cape Cod Lobster Bisque

This untraditional lobster bisque is easy and quick with just enough flavor from the lobster...




In a large pot, melt the butter and sauté the onions, carrots, celery, and garlic until soft.  Add the wine and cognac.  Simmer gently for 3 or 4 minutes.

Add the chicken or fish broth, the tomato paste, and the rice.  Cover and cook for about 30 minutes until the rice is tender.  Stir in 1 cup of the lobster. 

In a blender or food processor, puree the soup in small batches until smooth. Return all soup to the pot.  Add the heavy cream in small amounts and heat through.  Do not boil. 

Add the rest of the lobster meat and heat.  Season with the sea salt and pepper.  Garnish with the fresh parsley.
