Kale Soup
A hearty, traditional version, this kale soup is chock full of beans and linguica. Allow to sit for day to allow the flavors to blend and mellow.
If linguica is hard to find where you live, try substituting a spicy sausage instead...
Ingredients
- 1 large beef soup bone
- 10 cups water
- 2 tablespoons butter
- 6 cloves of garlic
- 2 medium onions
- 2 tomatoes
- 1 1/2 lb linguica
- 1 lb fresh kale
- 3 medium potatoes
- 1 can each red and white kidney beans
- Sea salt and fresh ground pepper to taste
Prep
- Mince or press the garlic
- Clean and chop the onions
- Slice the linguica into 1/2 inch pieces
- Clean and shred the kale
- Peel and dice the potatoes
- Drain the beans
Directions
In a large pot, melt the butter over medium heat. Cook the garlic and the onions until tender. Add the soup bone and water. Bring to a boil. Reduce the heat and simmer partially covered for 2 hours.
Add the linguica and cook for another half hour.
Add the kale, potatoes, and kidney beans. Add a little more water if you need it. Season with the sea salt, and pepper. Simmer for another half hour or until the potatoes are cooked.
Remove the soup bone from the pot. Cut off any meat on the bone. Return to the pot.
Allow the soup to cool and skim off the fat. Reheat gently and serve.

If you are in a hurry or don't like to cook with bones, use 6 cups of beef broth and 3 cups water of water instead of the beef bone
- Try adding two chopped tomatoes or finely diced carrots
