Creamy Herb Soup
We make this light and lovely soup all summer long with big handfuls of herbs pulled straight from the garden. Choose your favorites and put in as much as you like! This soup is the perfect start to a special meal...
Ingredients
- 8 ounces fresh herbs in any combination such as:
- Chervil
- Tarragon
- Parsley
- Chives
- Dill
- Watercress
- 1 tablespoon lemon juice
- 5 scallions
- 1 medium onion
- 2 tablespoons butter
- 1 tablespoon cornstarch
- 4 cups chicken broth
- 1/2 cup white wine
- 1/2 cup heavy cream or half and half
- Sea salt and fresh ground pepper to taste
- Pinch of nutmeg
- Croutons
Prep
- Wash and dry the herbs
- Cut off the stalks
- Finely chop by hand or in a food processor
- Sprinkle with the lemon juice
- Clean and cut the scallions into rings
- Chop the onions
Directions
In a large pot, melt the butter and sauté the scallions and the onions until soft. Sprinkle the cornstarch and add the chicken broth. Stir thoroughly to get out all the lumps.
Add the white wine and cream. Simmer for a few minutes. Add the chopped herbs. Partially cover and simmer on very low heat for 10 minutes. Be careful not to boil.
Season with the sea salt, pepper, and nutmeg. Sprinkle with croutons.
