French Onion Soup
A tradional version of this classic favorite...
Ingredients
- 6 large yellow onions
- 3 tablespoons butter
- 8 cups beef broth
- 2 cloves garlic
- 1 small carrot
- Fresh thyme to taste
- Sea salt and fresh ground pepper to taste
- French bread
- 2 cups Swiss cheese
- 1/2 cup Parmesan cheese
Prep
- Thinly slice the onions
- Mince or press the garlic
- Clean and finely dice the carrot
- Slice and toast 8 pieces of French bread
- Shred the Swiss cheese (or purchase pre-shredded cheese)
- Mix the Swiss and Parmesan cheeses together
Directions
In a large pot, melt the butter and sauté the onions for about 30 minutes until very soft. Be careful not to burn them. Add the garlic and carrots and cook for a few minutes.
Add the beef broth, thyme, sea salt and pepper. Bring to a boil. Reduce heat and partially cover. Simmer for 30 minutes.
Put slices of French bread in the bottoms of oven-proof soup bowls. Pour hot soup over the bread and sprinkle generously with cheese. Put under a low broiler for 10 minutes or until the cheese is bubbly and slightly browned.
