Cape Cod Corn Chowder
Our very favorite corn chowder. We usually add extra cumin, cheese, and wine to this hearty recipe...
Ingredients
- 1 large potato
- 1 bay leaf
- 1 medium onion
- 3 tbs butter
- 1/2 tsp dried sage
- 1 tsp powdered cumin or more to taste
- 3 tbs flour
- 2 cans of corn
- 1 cup dry white wine
- 1 1/2 cup heavy cream
- Fresh chives and parsley to taste
- Sea salt and fresh ground pepper to taste
- 8 oz sharp Cheddar cheese or more
Prep
- Peel and dice the potato
- Finely chop the onion
- Drain the corn well
- Finely chop the chives and parsley
- Grate the Cheddar cheese
Directions
In a small pan, boil the potato in 2 cups salted water with the sage, cumin, and bay leaf until soft. Set aside.
In a large pot, sauté the onion in the butter until soft. Mix in the flour. Add the heavy cream and whisk thoroughly. Add the potatoes—water and all. Remove the bay leaf.
Add the corn, chives, parsley, and wine. Simmer for 15 minutes. Remove from the heat.
Add in the Cheddar cheese. Stir until melted. Season with the sea salt and pepper.
- The chowder may be lightened by substituting light cream, half and half, or even milk for the heavy cream
- Try adding a little more cumin, wine, and cheese to the chowder. Go slowly, though, and be especially careful with the cumin as it gets strong quickly...
