Cape Cod Seafood Chowder

A long time favorite of ours, this chowder is filled with fresh seafood and vegetables and flavored with just the right amount of brandy...




In a large pan, melt 2 tablespoons of the butter over medium heat. Add the garlic and sauté for a minute or so. Increase the heat to high and add the scallops.  Brown on both sides.  Add the brandy and coat the scallops well.  Transfer to a large pot. 

Add the clam juice and chicken broth.   Bring to a boil.  Reduce heat and simmer.

In another pan, melt the rest of the butter. Add the potatoes and cook for five minutes.  Add the shallots and cook for another 5 minutes.  Add the carrots and the leeks. Cook for five minutes more. 

Add all of the vegetables to the soup pot.  Simmer until the vegetables are tender.  Add the shrimp and crab meat.  Heat through very gently.  Do not let the soup boil. 

Add the heavy cream or half and half.  Season with the sea salt and pepper.  Simmer until heated through again. Garnish with parsley and serve.
