Chicken with Rice Puree

A perfect start to Sunday dinner, this chicke rice soup has a mild, pleasant flavor. Garnish with some parsley or celery leaves to show off it's pretty, white color...

In a large pot, place the chicken, leeks, carrots, rice, bay leaf, herbs, and chicken broth. Bring to a boil. Reduce the heat and simmer until the chicken is thoroughly cooked and the rice is tender. Remove the bay leaf and skim the broth.

Puree the soup in small batches in a food processor or blender until very smooth.  Return to the pot.  Add the cream and mix in.  Season with the sea salt and pepper.  Reheat gently but do not let the soup boil.    

Garnish with a little of the herbs.
