Cape Cod Chicken Noodle Soup
A cup of white wine gives this chicken noodle soup a pleasant lift...
Ingredients
- 2 boneless skinless chicken breasts
- 3 leeks
- 3 carrots
- 3 celery stalks
- 1/2 lb green beans
- 1 lb white button mushrooms
- 1/2 cup butter
- 5 cups chicken broth
- 3 cups water
- 1 cup white wine
- 1 lb medium egg noodles
- Fresh parsley
- Sea salt and fresh ground pepper to taste
Prep
- Clean and dice the leeks. Use just the white parts
- Clean and slice the carrots into 1/2 inch pieces
- Clean and chop the celery
- Snap the ends off the green beans and break into thirds
- Clean and slice the mushrooms
- Chop the parsley
Directions
In a large pot, melt the butter over medium heat. Add the leeks, carrots, and celery. Season generously with the sea salt and pepper. Sauté in the butter for 5 minutes.
Add the chicken broth, water, and wine. Bring to a boil.
Add the chicken breasts and reduce the heat. Simmer for 15 minutes or until the chicken is cooked through. Remove the chicken from the pot and let cool.
Add the green beans and simmer for another 5 minutes.
Dice the chicken and return it to the pot. Add the chopped parsley and stir. Heat through.
In a second pot, cook the egg noodles according to the package directions. Drain and cover to keep warm.
Add the noodles to individual servings of soup.
