Chicken Minestrone with Orzo

Ingredients
- 6 cups chicken broth
- 2 cups water
- 2 skinless, boneless chicken breasts
- 4 carrots
- 1/2 lb green beans
- 1 small eggplant
- 2 large zucchini
- 2 medium onions
- 1/2 small head green cabbage
- 1 lb button mushrooms
- 3 tomatoes
- 3 cloves garlic
- 1/2 cup orzo
- 3 tablespoons butter
- 1 can cannellini beans
- 1 cup Parmesan cheese
- Sea salt and fresh ground pepper to taste
Prep
- Clean and slice the carrots, zucchini, and eggplant into 1 inch slices
- Snap the ends off the green beans and break in half
- Finely chop the onion
- Shred the cabbage
- Clean and thinly slice the mushrooms
- Mince or press the garlic
- Chop the tomatoes
- Drain the cannellini beans
Directions
In a large pot, heat the chicken broth and water over medium heat. Add the chicken breasts. Simmer for about 15 minutes until cooked completely through. Check to make sure no pink remains. Remove the chicken and dice. Strain the broth. Return the chicken and the broth to the pot and set aside.
In a large pan, melt the butter and sauté the onions and garlic over medium heat until soft.
- Add the zucchini, green beans, carrots, and eggplant. Sauté for 3 minutes
- Add the cabbage and sauté for an additional 2 minutes
- Add the mushrooms and cook for 2 more minutes
Add the vegetables, tomatoes, basil, and Parmesan cheese to the soup pot. Bring to a boil. Reduce the heat and simmer until all of the vegetables are soft about 15 minutes or so.
Add the orzo and cannellini beans. Cook until the orzo is tender about 10 minutes. Season with the sea salt and pepper.
