Carrot Soup with Ginger

This bright orange soup reminds us of colorful fall leaves and the first crisp days of autumn. Delicious both warm and cold, we like to spice up the mild flavor of the carrots by adding a little extra ginger and curry powder...

Directions

In a large pot, melt the butter over medium heat.  Add the onion, ginger, and garlic.  Cook for about 5 minutes. 

Add the chicken broth, the wine, and the carrots.  Bring to a boil.  Reduce the heat and simmer for about 45 minutes until the carrots are soft.  Season with the sea salt, pepper, lemon juice, and curry powder.

Puree in small batches in a blender or food processor.  Return to the pot and reheat gently.  Do not let the soup boil.  Garnish with the parsley.
